Ingredients
- 1 x Mullet
- 1 x salted lemon/lime
- 5g x dried orange peel (can be replaced with fresh orange peel, slightly dried in the oven)
- 5g x ginger
- 5g x spring onion
- 1 tsp x sweet soy sauce
- 30ml x water
- 1 tsp x white wine (rice wine,sake, or Shaoxing wine)
- 10g x corn flour
- Salt and pepper to taste
How To
- Slice ginger and cut spring onion into sections
- Soak and cut dried orange peel in slices
- Clean and dry mullet. Marinate with salt and pepper
- Squeeze salted lemon/lime juice on mullet
- Put salted lemon/lime into mullet
- Place ginger and spring onion on plate, put mullet over ginger and spring onion
- Put dried orange peel on mullet
- Place in steamer for 8 - 10 minutes (depending on size of fish)
- Mix water, sweet soy sauce, white wine, corn flour and cook slightly
- Pour sauce on fish
If you are into spicy, you can add some chilli on the fish as well.
